a Mezcal Moment.

I'm not a huge tequila drinker.  I respect those who can take it down like its nothing, but I've learned over the years that tequila is not my friend.  This "situation" doesn't stop me from enjoying the occasional margarita, or sipping on some Avion 44 when offered.  I've recently started substituting my tequila drinks with Mezcal.  Mezcal often has a distinctly smoky flavor that tequila does not have.  This comes from roasting the agave plant that is used to make mezcal, rather than it being steamed, like when used for tequila.  For me, this switch in production not only gives an added flavor profile to your drink, but I have yet to experience any unpleasantries from mezcal consumption (knock on wood) as I do with tequila.

All tequila’s are mezcals, but not all mezcals are tequila

    Mezcal + Pineapple

    -Needs-

    • Rocks or Highball Glass
    • Double Sided Jigger
    • Shaker (with strainer)
    • Pairing or small knife

    1.5oz Mezcal

    1oz St Germaine

    1oz Pineapple Juice

    0.5oz Simple Syrup

    0.5oz Lemon Juice

Garnish: Lemon Wheel or Pineapple Chunk

Add ice to your shaker with all ingredients expect garnish.  Dip the rim of your empty glass into lime juice, and then into your salt.  Add Ice. Pour and strain your drink from the shaker in your glass.

If you can use fresh pineapple juice, let your pineapple get just at overripe.  Cut up, blend, and strain for juice.   (or use a muddler to press the chunks!) The nutty flavors from the ripeness of the pineapple will pair awesomely with the Mezcal!
